  • 2 cups mashed sweet potatoes (about 2 medium) Ensure sweet potatoes are thoroughly cooked and well-mashed.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg Consider adding a sprinkle on top before baking for extra flavor.
  • 3 large eggs (room temperature) For egg-free version, use flaxseed or chia seed substitute.
  • 1 tsp vanilla extract
  • 1/4 tsp salt
Crust
  • 1 pie crust (store-bought or homemade) Ensure the crust is rolled out and pocked with holes.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Roll out the pie crust into a greased baking dish, then poke holes in the bottom.
  3. Boil or bake the sweet potatoes until soft, then peel and mash them smoothly.
  4. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, salt, eggs, and vanilla extract. Whisk all the ingredients together until smooth.
  5. Pour the mixture into the prepared pie crust, spreading it evenly.
Baking
  1. Bake for 40-45 minutes until the filling is set and a toothpick inserted comes out clean.
  2. Let the bars cool completely in the pan before slicing.

Notes

Consider adding chocolate chips or walnuts for a twist. Serve warm with whipped cream or vanilla ice cream.
