Preparation
- Preheat your oven to 350°F (175°C).
- Roll out the pie crust into a greased baking dish, then poke holes in the bottom.
- Boil or bake the sweet potatoes until soft, then peel and mash them smoothly.
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, cinnamon, nutmeg, salt, eggs, and vanilla extract. Whisk all the ingredients together until smooth.
- Pour the mixture into the prepared pie crust, spreading it evenly.
Baking
- Bake for 40-45 minutes until the filling is set and a toothpick inserted comes out clean.
- Let the bars cool completely in the pan before slicing.
Notes
Consider adding chocolate chips or walnuts for a twist. Serve warm with whipped cream or vanilla ice cream.
