Ingredients
  

For the Cake
  • 1 large large egg Fresh and rich, the base of your cake.
  • 3 tbsp granulated sugar For sweetness, enhancing flavor.
  • 3 tbsp avocado oil Adds moisture while keeping the cake light.
  • 1/2 tsp vanilla extract Pure vanilla essence for aroma.
  • 7 tbsp all-purpose flour The backbone of your cake.
  • 1/2 tsp baking powder Ensures cakes rise to fluffy perfection.
  • 1/4 tsp salt Balances out the sweetness.
  • 2 tbsp whole milk Adds creaminess and moistness.
  • 2 tbsp Christmas sprinkles Adds a pop of color.
For the Cream Cheese Frosting
  • 3 oz cream cheese (softened) The heart of the frosting, creamy and delicious.
  • 4 tbsp powdered sugar Sweetens the frosting.
  • 1/2 tsp vanilla extract Additional flavor for frosting.
  • splash of heavy cream (optional) To adjust frosting consistency.

Method
 

Prep & Preheat
  1. Spray two 4-ounce ramekins generously with nonstick cooking spray and place them on a small baking sheet.
  2. Preheat your oven to 350°F (175°C).
Mix the Wet Ingredients
  1. In a medium bowl, whisk together the large egg, granulated sugar, avocado oil, and ½ teaspoon of vanilla extract until smooth.
Combine the Dry Ingredients
  1. In a separate small bowl, whisk together the all-purpose flour, baking powder, and ¼ teaspoon of salt.
Form the Batter
  1. Gradually fold the dry ingredient mixture into the wet ingredients in two additions. Alternate by adding the milk one tablespoon at a time. Stir until just combined.
Add Some Cheer
  1. Gently fold in the Christmas sprinkles until evenly distributed.
Bake
  1. Divide the batter evenly between the prepared ramekins. Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cakes cool completely in the ramekins.
Make the Frosting
  1. In a small bowl, beat the softened cream cheese, powdered sugar, and remaining ½ teaspoon of vanilla extract until smooth.
  2. Add a splash of heavy cream if needed for spreadability.
Frost & Decorate
  1. Once cooled, carefully remove the cakes from the ramekins, spread the frosting over each cake, and decorate with additional Christmas sprinkles.

Notes

Use room temperature ingredients for even baking. Consider adding citrus zest for extra flavor. You can use different seasonal sprinkles for decoration.
