Ingredients
  

For the marinade
  • 2 pieces Fish fillets (tilapia, cod, or salmon) Choose your favorite kind for tenderness.
  • 6 sprigs Thyme (chopped) Fresh thyme adds earthy notes that elevate the dish.
  • 3 sprigs Rosemary (chopped) Its aromatic quality pairs beautifully with fish.
  • 1 tsp Oregano (dried) A classic Mediterranean herb that enhances flavor.
  • 2 tsp Parsley (chopped or dried) Brightens the dish.
  • 4 cloves Garlic (minced) Provides delicious savory aroma.
  • 1 tsp Basil (chopped, optional) Adds a sweet note and freshness.
  • 1 tsp Lemon zest For a burst of citrusy flavor.
  • 1 tbsp Lemon juice Balances the richness of the fish.
  • 1 tbsp Sweet chili sauce A hint of sweetness to counterbalance savory elements.
  • 0.5 tsp Salt Simple seasoning to enhance flavors.
  • 0.5 tsp Black pepper Brings the together flavors.
  • 0.25 cup Olive oil Rich and hearty, helps cook the fish.
For the vegetables
  • 1 cup Cherry tomatoes Bursting with sweetness.
  • 0.5 cup Olives (pitted) Provides a salty, briny contrast.
  • 1 medium Onion (diced) Adds sweetness and depth of flavor.
  • 1 piece Zucchini (diced) A mild, nutritious vegetable that pairs well.

Method
 

Preparation
  1. Preheat the oven to 400℉ and lightly grease or line a baking dish with parchment paper.
  2. In a mixing bowl, add all the marinade ingredients except for the fish and vegetables. Mix well to create a fragrant marinade.
  3. Generously rub the marinade on both sides of the fish fillets and set aside, saving about ½ tablespoon of the marinade for later.
  4. Toss the diced onion, zucchini, cherry tomatoes, and olives in the remaining marinade until well coated.
  5. Pour the vegetable mixture into the prepared baking dish and then place marinated fish fillets on top.
  6. Scrape any remaining marinade from the bowl and drizzle over the fish.
Baking
  1. Place the dish on the middle rack of the preheated oven and bake for about 15 minutes, or until the fish is flaky and an internal thermometer reads 145℉.
  2. Let it rest for about 5 minutes before serving.

Notes

To elevate the dish, experiment with different herbs or add red pepper flakes for heat. You can also replace vegetables based on what's in season.
