Preparation
- Preheat the oven to 400℉ and lightly grease or line a baking dish with parchment paper.
- In a mixing bowl, add all the marinade ingredients except for the fish and vegetables. Mix well to create a fragrant marinade.
- Generously rub the marinade on both sides of the fish fillets and set aside, saving about ½ tablespoon of the marinade for later.
- Toss the diced onion, zucchini, cherry tomatoes, and olives in the remaining marinade until well coated.
- Pour the vegetable mixture into the prepared baking dish and then place marinated fish fillets on top.
- Scrape any remaining marinade from the bowl and drizzle over the fish.
Baking
- Place the dish on the middle rack of the preheated oven and bake for about 15 minutes, or until the fish is flaky and an internal thermometer reads 145℉.
- Let it rest for about 5 minutes before serving.
Notes
To elevate the dish, experiment with different herbs or add red pepper flakes for heat. You can also replace vegetables based on what's in season.
