Ingredients
  

For the soup base
  • 1 tablespoon olive oil to infuse a warm richness into the soup
  • 1 medium onion, finely diced for a touch of sweetness
  • 1 pound ground beef (80/20) providing heartiness and protein

  • 2 tablespoons tomato paste for depth and intensity
  • 25 ounces tomato basil pasta sauce the foundation of our sauce
  • 28 ounces diced canned tomatoes introducing freshness and texture
  • 4 cups chicken broth creating a loving, warm base
  • 2 teaspoons kosher salt, divided adjusting flavor perfectly
For the lasagna
  • 12 pieces lasagna noodles, uncooked, broken into 2” pieces the heart of our soup
For garnish and creaminess
  • ½ cup heavy cream (optional) for that velvety texture
  • 1 cup shredded mozzarella cheese melty goodness
  • ½ cup freshly grated parmesan cheese a nutty layer of flavor
  • ½ cup ricotta cheese adding creaminess and richness
  • 6 tablespoons fresh basil, finely chopped for that fresh, herbal note

Method
 

Preparation
  1. Start by heating olive oil in a large pot over medium heat. Once warm, add diced onion and cook until soft and fragrant, about 4-5 minutes.
  2. Add ground beef, breaking it apart as it cooks. Brown the meat well for flavor enrichment.
  3. Stir in minced garlic, red pepper flakes, kosher salt, dried oregano, and tomato paste. Cook this mixture until fragrant, about 2 minutes.
  4. Pour in tomato basil pasta sauce, diced canned tomatoes, and chicken broth. Stir and bring to a gentle boil.
  5. Once boiling, add broken lasagna noodles. Reduce heat and simmer until noodles are tender, about 10-12 minutes.
  6. Stir in heavy cream just before serving for added creaminess.
  7. Mix in shredded mozzarella cheese until melted into the soup, creating a stringy delight.
  8. Serve hot, garnished with ricotta cheese, extra mozzarella or parmesan, and sprinkle fresh basil.

Notes

For an extra kick, you can add more red pepper flakes or sliced jalapeños. Use leftover vegetables for added nutrition. Browning meat and veggies together enhances flavor. Fresh herbs elevate the dish.
