Preparation
- Microwave the cream cheese until soft, about 30 seconds to 1 minute, so it integrates smoothly. Set it aside while you prepare the chicken.
- Slice the chicken breasts lengthwise into thinner cutlets. Season both sides with garlic powder, salt, and black pepper.
Cooking
- In a skillet, melt butter and olive oil over medium-high heat. Add the seasoned chicken cutlets, searing them for 5-6 minutes on each side until cooked through.
- Remove the chicken from the skillet and place on a plate. Add chopped onions to the skillet, sautéing until softened.
- Incorporate minced garlic into onions and cook for an additional 30 seconds.
- Pour in the chicken broth, followed by the softened cream cheese, Italian seasoning, and red pepper flakes. Stir until smooth.
- Return the chicken to the skillet, coating it in the sauce. Allow it to simmer for 1-2 minutes.
- Garnish with fresh parsley and serve warm.
Notes
Consider adding sautéed mushrooms or sun-dried tomatoes for extra flavor. For a lighter version, use low-fat cream cheese or Greek yogurt.
