- In a medium bowl, mix together the Cool Whip, powdered sugar, creamy peanut butter, and vanilla extract until everything is smooth and creamy.
- Scoop small portions of the mixture and roll them into bite-sized balls. Place them on a parchment-lined baking sheet and pop them in the freezer for 30-60 minutes.
- While the candy balls are chilling, melt the chocolate chips and unsalted butter together, stirring until smooth.
- Dip each candy ball into the melted chocolate until fully coated, then place them back on the parchment paper.
- Return the chocolate-coated candies to the freezer for about 5-10 minutes until the chocolate hardens.
Notes
Store in an airtight container in the refrigerator for up to one week or in the freezer for up to three months. Consider using different flavors of Cool Whip or peanut butter for a unique twist.
