Preparation
- In a mixing bowl, pour in 2 cups of your choice of milk.
- Add 2 tablespoons of unsweetened cocoa powder and whisk vigorously until smooth and well-combined.
- Slowly sprinkle in 1/4 cup of chia seeds into the mixture and stir quickly to avoid clumping.
- Incorporate 3 tablespoons of maple syrup into the pudding mix and whisk to combine.
- Add 1 teaspoon of vanilla extract and give it a final whisk.
- Cover the bowl and let it chill in the refrigerator for at least 4 hours, preferably overnight.
Serving
- After chilling, remove the pudding from the fridge and stir to break up any clumps.
- Scoop into serving cups and enjoy.
Notes
For an even richer chocolate flavor, mix in chocolate chips or a pinch of sea salt. Top with fresh fruits or extra maple syrup.
