  • 3 tablespoons Maple Syrup (or Sweetener of Choice) Natural sweetener that balances bitterness.
  • 1 teaspoon Vanilla Extract Adds a fragrant note.

Preparation
  1. In a mixing bowl, pour in 2 cups of your choice of milk.
  2. Add 2 tablespoons of unsweetened cocoa powder and whisk vigorously until smooth and well-combined.
  3. Slowly sprinkle in 1/4 cup of chia seeds into the mixture and stir quickly to avoid clumping.
  4. Incorporate 3 tablespoons of maple syrup into the pudding mix and whisk to combine.
  5. Add 1 teaspoon of vanilla extract and give it a final whisk.
  6. Cover the bowl and let it chill in the refrigerator for at least 4 hours, preferably overnight.
Serving
  1. After chilling, remove the pudding from the fridge and stir to break up any clumps.
  2. Scoop into serving cups and enjoy.

Notes

For an even richer chocolate flavor, mix in chocolate chips or a pinch of sea salt. Top with fresh fruits or extra maple syrup.
