Beef Filling
  • 1 lb ground beef Tender and juicy, providing a savory base.

Enchiladas
  • 8 pieces flour or corn tortillas Soft and pliable, perfect for wrapping.
  • 2 cups red enchilada sauce Store-bought or homemade, adds tang and richness.
  • 2 cups shredded cheddar or Mexican-blend cheese Divided, melts beautifully for a creamy texture.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is browned (about 6–8 minutes). Drain any excess fat.
  3. Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for an additional minute.
  4. Spread ½ cup of the enchilada sauce across the bottom of a baking dish.
  5. Take each tortilla and spoon the beef mixture into the center. Sprinkle a little cheese on top before tightly rolling and placing them seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle the remaining cheese on top.
  7. Cover the baking dish with foil and bake for 15 minutes. Afterwards, uncover and bake for another 10 minutes, or until the cheese is bubbly and lightly golden.
  8. Allow the enchiladas to rest for about 5 minutes before serving.
  9. Enhance your dish with your choice of toppings.

Notes

For extra flavor, consider adding 1 tablespoon of taco seasoning to the beef mixture. You can use pre-cooked chicken or turkey instead of ground beef. For a healthier option, use whole-grain tortillas or low-fat cheese.
