Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is browned (about 6–8 minutes). Drain any excess fat.
- Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for an additional minute.
- Spread ½ cup of the enchilada sauce across the bottom of a baking dish.
- Take each tortilla and spoon the beef mixture into the center. Sprinkle a little cheese on top before tightly rolling and placing them seam-side down in the dish.
- Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle the remaining cheese on top.
- Cover the baking dish with foil and bake for 15 minutes. Afterwards, uncover and bake for another 10 minutes, or until the cheese is bubbly and lightly golden.
- Allow the enchiladas to rest for about 5 minutes before serving.
- Enhance your dish with your choice of toppings.
Notes
For extra flavor, consider adding 1 tablespoon of taco seasoning to the beef mixture. You can use pre-cooked chicken or turkey instead of ground beef. For a healthier option, use whole-grain tortillas or low-fat cheese.
