Preparation
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch casserole dish with cooking spray or butter.
- In a large skillet over medium heat, cook the ground beef until browned; drain excess fat.
- Add the onion and garlic, sautéing for 3-4 minutes until the onion is soft.
- Season with salt, pepper, paprika, and thyme.
- Sprinkle flour over the beef mixture, stirring to coat evenly. Cook for an additional 1-2 minutes; gradually add broth and milk, stirring until creamy.
- Mix in sour cream and 1 cup of cheddar cheese until melted.
Assembly and Baking
- Layer half of the sliced potatoes in the greased casserole dish. Spread the beef mixture over the potatoes, then layer remaining potatoes and cheddar cheese.
- Dot the top with butter.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
- Let the casserole rest for 5 minutes before serving.
