Ingredients
  

For the shrimp and sauce
  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup heavy cream Can substitute with coconut cream for a lighter version.
  • 2 tablespoons fresh lime juice
For the vegetables
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • Fresh parsley, chopped for garnish
  • Lime wedges for garnish

Method
 

Preparation
  1. In a bowl, toss the peeled and deveined shrimp with Cajun seasoning until they are decadently coated and fragrant. Set them aside.
Cooking
  1. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and bell peppers, cooking until they soften, about 4-5 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the diced tomatoes with their juice and bring the mixture to a gentle simmer.
  4. Lower heat and stir in the heavy cream, cooking on low for 3-4 minutes.
  5. Add the seasoned shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
  6. Remove from heat and stir in the lime juice. Season with salt and pepper as desired.
  7. Garnish with fresh parsley and serve with lime wedges.

Notes

Watch out for overcooking the shrimp; they should be just pink and opaque to avoid a rubbery texture. Store leftovers in an airtight container for up to two days.
