- In a bowl, toss the peeled and deveined shrimp with Cajun seasoning until they are decadently coated and fragrant. Set them aside.
Cooking
- Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and bell peppers, cooking until they soften, about 4-5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the diced tomatoes with their juice and bring the mixture to a gentle simmer.
- Lower heat and stir in the heavy cream, cooking on low for 3-4 minutes.
- Add the seasoned shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
- Remove from heat and stir in the lime juice. Season with salt and pepper as desired.
- Garnish with fresh parsley and serve with lime wedges.
Notes
Watch out for overcooking the shrimp; they should be just pink and opaque to avoid a rubbery texture. Store leftovers in an airtight container for up to two days.
