Dry Ingredients
  • 2 cups rolled oats (old-fashioned)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 large egg (or 1 flax egg for vegan option)
  • 1/3 cup maple syrup (or honey)
  • 1/4 cup almond butter (or any nut/seed butter)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk (dairy or non-dairy)
Add-ins
  • 1 1/4 cups diced apples (peeled or unpeeled, your choice)
  • 1/4 cup chopped walnuts (raisins, or chocolate chips, optional) Optional ingredients for added flavor and texture.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8x8-inch square baking pan by lining it with parchment paper or giving it a light greasing.
  3. In a large bowl, combine the rolled oats, ground cinnamon, baking powder, and salt. Stir well.
  4. In a separate bowl, whisk together the egg, maple syrup, almond butter, vanilla extract, and milk until smooth.
  5. Pour the wet ingredients into the dry ingredients, gently stirring until just combined.
  6. Fold in the diced apples and any optional ingredients like walnuts, raisins, or chocolate chips.
  7. Pour the mixture into the prepared baking pan, spreading it into an even layer.
Baking
  1. Place the pan in the oven and bake for 25–30 minutes or until golden brown and a toothpick inserted comes out clean.
  2. Allow the bars to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.
  3. Slice into 9 bars.
