Ingredients
  

For the crust
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (cold and cubed)
  • 1/4 cup ice water
For the apple filling
  • 6-7 medium apples (Granny Smith or Honeycrisp work best)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
For the crumble topping
  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (cold and cubed for topping)
  • 1/4 cup chopped walnuts or oats (optional) For extra crunch

Method
 

Prepare the Crust
  1. Combine flour and salt in a mixing bowl. Cube the cold butter and mix it in using your fingers until the mixture resembles coarse crumbs.
  2. Gradually add in the ice water, mixing until just combined. Form the dough into a disk, wrap in plastic, and refrigerate for about 30 minutes.
Make the Apple Filling
  1. Peel, core, and slice your apples. Toss the sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice, ensuring each apple is coated.
Create the Crumble Topping
  1. In another bowl, mix flour, brown sugar, and granulated sugar for the topping. Work in the cubed cold butter until it resembles coarse crumbs.
  2. Add chopped walnuts or oats for added crunch if desired.
Assemble the Pie
  1. Roll out the chilled crust and fit it into a pie pan. Pour the apple filling into the crust evenly.
  2. Sprinkle the crumble topping over the apple mixture like a cozy blanket.
Bake the Pie
  1. Preheat the oven to 375°F (190°C) and bake the pie for 45-55 minutes, until the apples are bubbly and the topping is golden brown.
  2. Let the pie cool before serving.
