Preparation
- Preheat the oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, combine the pumpkin puree, cocoa powder, protein powder, honey, baking powder, baking soda, and salt. Mix until well incorporated.
- Gradually mix in the almond milk and vanilla extract until smooth. The batter should be thick but pourable.
- Pour the batter into the donut pan, filling each cavity about 3/4 full.
Baking
- Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
- Let the donuts cool for a few minutes before removing them from the pan.
- Dip each donut in creamy protein frosting before serving.
Notes
Use fresh pumpkin puree for a better flavor. Optional: Sprinkle nuts or chocolate chips into the batter for added texture. These can also be made in muffin tins.
