  • 1 stick unsalted butter (1/2 cup)
  • 1/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
For the frosting
  • 1/2 cup unsalted butter
  • 1/4 cup Coca-Cola
  • 1/4 cup unsweetened cocoa powder
  • 3–4 cups powdered sugar
  • 1 teaspoon vanilla extract
For garnish (optional)
  • 1/2 cup chopped pecans or walnuts

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9x13-inch baking dish thoroughly.
  3. In a saucepan, combine the Coca-Cola, vegetable oil, unsalted butter, and cocoa powder over medium heat. Stir until the butter is completely melted.
  4. Bring the mixture to a gentle boil while stirring constantly.
  5. Remove from heat and set aside to cool slightly.
Mixing the batter
  1. In a large bowl, whisk together the granulated sugar, all-purpose flour, baking soda, and salt.
  2. Pour the hot cocoa mixture over the dry ingredients and stir to combine.
  3. In a separate small bowl, whisk the eggs, buttermilk, and vanilla extract until well combined.
  4. Gently stir the egg mixture into the batter until just smooth.
Baking
  1. Pour the batter into the prepared baking dish and gently smooth the top with a spatula.
  2. Bake for 30 to 35 minutes, or until a toothpick inserted comes out with moist crumbs.
Frosting
  1. Let the cake cool completely before frosting.
  2. In a bowl, combine the butter, Coca-Cola, cocoa powder, powdered sugar, and vanilla extract to make the frosting.
  3. Spread the frosting over the cooled cake.

Notes

Let the cake cool completely before frosting to prevent melting. You can add chocolate chips for extra richness and use milk + vinegar mix if out of buttermilk.
