  • 1 small cucumber, thinly sliced Provides a refreshing bite.

  • 1 tablespoon fresh lemon juice Enhances the overall flavor.
  • 1 teaspoon ground cumin Brings depth to the wraps.

  • 1/4 cup finely chopped red onion (optional) For added crunch.
  • 1 tablespoon olive oil Used to warm the tortillas.

Preparation
  1. Warm the tortillas: In a skillet over medium heat, drizzle in olive oil and warm the tortillas for about 30 seconds on each side until soft.
  2. Make the cottage cheese mixture: In a medium bowl, combine cottage cheese, lemon juice, ground cumin, smoked paprika, salt, and pepper. Mix until creamy.
  3. Prepare the tortillas: Lay a warm tortilla flat and spread 1/4 cup of the cottage cheese mixture in the center.
  4. Add the fresh ingredients: Layer slices of avocado, cucumber, diced tomato, and if desired, red onion and cilantro.
  5. Roll the tortilla: Gently roll the tortilla tightly, folding in the edges to secure the fillings.
  6. Serve: Enjoy immediately or wrap tightly in foil for later. Refrigerate for up to 24 hours.
