- Warm the tortillas: In a skillet over medium heat, drizzle in olive oil and warm the tortillas for about 30 seconds on each side until soft.
- Make the cottage cheese mixture: In a medium bowl, combine cottage cheese, lemon juice, ground cumin, smoked paprika, salt, and pepper. Mix until creamy.
- Prepare the tortillas: Lay a warm tortilla flat and spread 1/4 cup of the cottage cheese mixture in the center.
- Add the fresh ingredients: Layer slices of avocado, cucumber, diced tomato, and if desired, red onion and cilantro.
- Roll the tortilla: Gently roll the tortilla tightly, folding in the edges to secure the fillings.
- Serve: Enjoy immediately or wrap tightly in foil for later. Refrigerate for up to 24 hours.
