Ingredients
  

For the Sandwiches
  • 1 large Fresh cucumber Thin-skinned for best flavor
  • 8 slices Soft white bread Crusts removed
  • 4 oz Cream cheese or softened butter Generously spread on bread
  • 1 pinch Salt To enhance flavor
  • 1 pinch Black pepper To enhance flavor
  • 1 tbsp Fresh dill or mint For added flavor

Method
 

Preparation
  1. Wash and dry the cucumbers thoroughly.
  2. Slice cucumbers thinly using a mandoline or a sharp knife.
  3. Pat the cucumber slices dry with a paper towel.
  4. Trim the crusts off the soft white bread slices.
  5. Lightly flatten each slice of bread with a rolling pin.
  6. Spread cream cheese or softened butter evenly on each slice.
  7. Arrange cucumber slices on half of the bread, overlapping slightly.
  8. Season cucumber slices lightly with salt and pepper.
  9. Top with the remaining bread slices, spread side down, and press gently.
  10. Cut sandwiches into small rectangles or triangles for serving.

Notes

Sandwiches can be prepared a few hours in advance. Cover with a damp paper towel and plastic wrap to retain moisture. Consistency in slice thickness is key—use a mandoline if possible.
