- Wash and dry the cucumbers thoroughly.
- Slice cucumbers thinly using a mandoline or a sharp knife.
- Pat the cucumber slices dry with a paper towel.
- Trim the crusts off the soft white bread slices.
- Lightly flatten each slice of bread with a rolling pin.
- Spread cream cheese or softened butter evenly on each slice.
- Arrange cucumber slices on half of the bread, overlapping slightly.
- Season cucumber slices lightly with salt and pepper.
- Top with the remaining bread slices, spread side down, and press gently.
- Cut sandwiches into small rectangles or triangles for serving.
Notes
Sandwiches can be prepared a few hours in advance. Cover with a damp paper towel and plastic wrap to retain moisture. Consistency in slice thickness is key—use a mandoline if possible.
