Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the turkey fillets dry with a paper towel and season them generously with salt and pepper.
  3. In a shallow bowl, mix together the breadcrumbs, Parmesan cheese, parsley, thyme, and lemon zest. Drizzle olive oil over the mixture until moistened.
  4. Dip each turkey fillet in the beaten egg, then coat it thoroughly with the breadcrumb mixture.
Cooking
  1. Heat olive oil in an ovenproof skillet over medium-high heat.
  2. Carefully place the turkey fillets in the skillet and cook for 2-3 minutes on each side until golden brown.
  3. Transfer the skillet to the oven and bake for 10-12 minutes, or until the internal temperature reaches 165°F (74°C).
  4. Meanwhile, combine the cranberries, sugar, orange juice, orange zest, and cinnamon in a saucepan. Bring to a boil, then reduce heat and simmer until the sauce thickens (approximately 8-10 minutes).
  5. Plate the turkey fillets and generously top with the homemade cranberry sauce.

Notes

For best results, let the coated turkey fillets sit for a few minutes before frying. Use gluten-free breadcrumbs for a gluten-free version. Experiment with different herbs in the breadcrumb mixture.
