Preparation
- Preheat your oven to 400°F (200°C).
- Pat the turkey fillets dry with a paper towel and season them generously with salt and pepper.
- In a shallow bowl, mix together the breadcrumbs, Parmesan cheese, parsley, thyme, and lemon zest. Drizzle olive oil over the mixture until moistened.
- Dip each turkey fillet in the beaten egg, then coat it thoroughly with the breadcrumb mixture.
Cooking
- Heat olive oil in an ovenproof skillet over medium-high heat.
- Carefully place the turkey fillets in the skillet and cook for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 10-12 minutes, or until the internal temperature reaches 165°F (74°C).
- Meanwhile, combine the cranberries, sugar, orange juice, orange zest, and cinnamon in a saucepan. Bring to a boil, then reduce heat and simmer until the sauce thickens (approximately 8-10 minutes).
- Plate the turkey fillets and generously top with the homemade cranberry sauce.
Notes
For best results, let the coated turkey fillets sit for a few minutes before frying. Use gluten-free breadcrumbs for a gluten-free version. Experiment with different herbs in the breadcrumb mixture.
