Preparation
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- In a mixing bowl, combine shredded chicken, cheeses, cumin, chili powder, garlic powder, onion powder, salt, pepper, and cilantro.
- Warm tortillas in the microwave between damp paper towels for 20-30 seconds.
Assembly
- Lay a tortilla flat and spoon 2-3 tablespoons of the chicken mixture in the center. Roll tightly and place seam-side down on the baking sheet.
- Lightly spray or brush the tops with olive oil.
Baking
- Bake for 15-20 minutes or until golden brown and crispy.
- Allow to cool slightly before serving.
Serving
- Serve with salsa, sour cream, and guacamole.
