Preparation
- In a large bowl, combine the shredded cabbage, rinsed black beans, and corn. Toss them gently to mix.
- In a separate bowl, whisk together the lime juice, olive oil, chipotle powder, and a pinch of salt and pepper to create a zesty dressing.
- Pour the dressing over the cabbage, black beans, and corn mixture. Toss everything together until well coated.
- Just before serving, add in the Chili Cheese Fritos and toss lightly.
- Serve immediately and enjoy the explosion of flavors and textures!
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Add Fritos just before serving for crunch.
