  • 1 cup corn, canned or frozen Sweet and juicy, complements the other ingredients.
Crunchy Topping
  • 2 cups Chili Cheese Fritos Adds an unexpected crunch and a burst of cheesy flavor.
Dressing
  • 1/4 cup lime juice Bright and tangy to enhance freshness.
  • 2 tablespoons olive oil Adds silkiness and helps marry flavors.
  • 1 teaspoon chipotle powder Introduces smoky heat.
  • to taste salt and pepper To season and enhance flavor.

Method
 

Preparation
  1. In a large bowl, combine the shredded cabbage, rinsed black beans, and corn. Toss them gently to mix.
  2. In a separate bowl, whisk together the lime juice, olive oil, chipotle powder, and a pinch of salt and pepper to create a zesty dressing.
  3. Pour the dressing over the cabbage, black beans, and corn mixture. Toss everything together until well coated.
  4. Just before serving, add in the Chili Cheese Fritos and toss lightly.
  5. Serve immediately and enjoy the explosion of flavors and textures!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Add Fritos just before serving for crunch.
