  • 1 can Black beans, rinsed and drained Adds creaminess and fiber
  • 1 can Corn, drained Brings sweetness and crunch
  • 1 can Diced tomatoes with green chilies Adds zesty flavor
  • 8 oz Cream cheese Adds richness and creaminess
  • 1 packet Ranch seasoning mix Provides herby flavor
  • 1 cup Chicken broth Luscious base for the chili

Method
 

Preparation
  1. Place the chicken breast in the bottom of the crockpot, spread out evenly.
  2. Add black beans, corn, diced tomatoes, ranch seasoning, and chicken broth on top.
  3. Cook on low for 6-8 hours or on high for 4 hours.
  4. About 30 minutes before serving, add the cream cheese to the crockpot.
  5. Shred the chicken in the pot using two forks and mix everything together.

Notes

For extra flavor, consider marinating the chicken in ranch seasoning the night before. You can also substitute Greek yogurt for cream cheese for a lighter meal.
