  • 3 to 4 pounds corned beef brisket with spice packet
  • 1 small head cabbage, cut into wedges
  • 4 medium-sized carrots, peeled and cut into chunks
  • 1 pound baby potatoes, halved or quartered
Broth and Seasoning
  • 4 cups beef broth (or enough to cover the meat)
  • 1 tablespoon olive oil (optional for searing)
  • Salt and pepper to taste
Garnishes
  • fresh parsley (optional)
  • mustard (optional)

Method
 

Preparation
  1. If you choose to enhance the flavors, heat a skillet over medium-high heat and add the olive oil. Sear each side of the corned beef brisket for about 4 to 5 minutes until a golden brown crust forms.
  2. Gently transfer the beautifully seared brisket into your crockpot.
  3. Sprinkle the spice packet evenly over the top of the beef.
  4. Nestle the carrots and potatoes around the brisket.
  5. Carefully pour the beef broth over everything, immersing the ingredients.
Cooking
  1. Cover your crockpot and set it to low for 8 to 10 hours or high for 4 to 6 hours.
  2. About an hour before you plan to serve, lay the cabbage wedges on top.
Serving
  1. Once cooking is complete, remove the corned beef from the pot and let it rest for a few minutes before slicing against the grain.
  2. Serve the dish hot, accompanied by the vegetables and optional garnishes.

Notes

To prepare a lighter version, opt for low-sugar broth, use a leaner cut of beef, and consider dairy-free options for garnishes.
