Preparation
  1. Place the chicken thighs in the Crock Pot in a single layer.
  2. In a mixing bowl, combine the teriyaki sauce, chicken broth, minced garlic, and ginger. Mix well.
  3. Pour the sauce mixture over the chicken thighs in the Crock Pot, making sure each piece is coated.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Cooking
  1. About 30 minutes before serving, stir in the rice, broccoli florets, and sliced bell pepper.
  2. Cover and cook until the rice is tender and the vegetables are cooked, typically 20-30 minutes more.
  3. Taste and adjust seasoning with salt and pepper before serving.

Notes

To elevate your dish, you can marinate the chicken in teriyaki sauce for a few hours before cooking. For garnishing, consider adding sesame seeds or chopped green onions.
