  • 10 pieces egg roll wrappers The perfect envelope for the filling.

Method
 

Preparation
  1. In a large mixing bowl, combine the chopped cooked shrimp, diced Andouille sausage, red bell pepper, corn kernels, softened cream cheese, sliced green onions, garlic powder, onion powder, and optional Cajun seasoning. Mix well to combine.
  2. Lay an egg roll wrapper flat on a clean surface with one corner facing you. Spoon about 2 tablespoons of the filling in the center.
  3. Fold the bottom corner of the wrapper over the filling, creating a sealed triangle. Fold in the sides and continue rolling tightly until fully encased.
  4. Seal the top corner with a dab of water on your fingertip.
Cooking
  1. Heat the oil in a deep fryer or large pot to about 350°F (175°C).
  2. Carefully add the egg rolls to the hot oil in batches, frying for about 3-4 minutes until golden brown, turning occasionally.
  3. Once fried, transfer the egg rolls to paper towels to drain excess oil.
Serving
  1. Serve hot with sweet and sour sauce or mustard for dipping.

Notes

You can prepare the filling and assemble the egg rolls in advance. Try different fillings to suit your taste. If you wish for a healthier option, consider air frying or baking the rolls instead of deep-frying.
