Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss cauliflower florets with olive oil, Old Bay seasoning, chili pepper, and black pepper to taste.
  3. Spread the seasoned cauliflower evenly on a parchment-lined baking sheet.
Cooking
  1. Roast for 30-35 minutes, flipping halfway through, until golden-brown and tender.
  2. In the last 10 minutes of roasting, sprinkle cheddar and parmesan cheese over the cauliflower.
  3. Remove from the oven, let cool slightly, and serve.

Notes

For extra crunch, sprinkle seasoned breadcrumbs before adding cheese. Store leftovers in an airtight container for up to 3 days.
