Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss cauliflower florets with olive oil, Old Bay seasoning, chili pepper, and black pepper to taste.
- Spread the seasoned cauliflower evenly on a parchment-lined baking sheet.
Cooking
- Roast for 30-35 minutes, flipping halfway through, until golden-brown and tender.
- In the last 10 minutes of roasting, sprinkle cheddar and parmesan cheese over the cauliflower.
- Remove from the oven, let cool slightly, and serve.
Notes
For extra crunch, sprinkle seasoned breadcrumbs before adding cheese. Store leftovers in an airtight container for up to 3 days.
