Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season the chicken breasts with salt, pepper, and half of the dill.
  3. Set up a breading station: In one bowl, whisk the eggs. In another, mix the panko breadcrumbs and the remaining dill.
  4. Dip each chicken breast in the egg wash, then coat it in the panko mixture.
Cooking
  1. Place the breaded chicken on the prepared baking sheet and bake for 20-25 minutes, until golden brown and the internal temperature reaches 165°F (75°C).
  2. Meanwhile, mix mayonnaise and lemon juice in a small bowl.
Assembly
  1. Once the chicken is done, assemble the sandwiches: Spread the sauce on buns, layer with crunchy lettuce, and top with the crispy chicken.
  2. Close the sandwich and serve.

Notes
