Method

Preparation
  1. In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until combined and fluffy.
  2. In another bowl, mix the milk, eggs, and vanilla extract until well blended.
  3. Gradually add the wet ingredients to the dry mixture, stirring until it forms a smooth batter without lumps.
Cooking
  1. In a large skillet or deep fryer, heat about 2 inches of vegetable oil to 375°F (190°C).
  2. Using a funnel or squeeze bottle, carefully drizzle the batter into the hot oil, forming a spiral or lattice pattern.
  3. Fry the cakes for about 1-2 minutes per side until they are golden brown.
  4. Remove the funnel cakes from the oil with a slotted spatula and drain on paper towels.
  5. Dust each cake generously with powdered sugar before serving.

Notes

Keep oil temperature consistent for even cooking. Try flavor variations like almond extract or cocoa powder for a twist. Serve warm with whipped cream, berries, or a drizzle of chocolate syrup.
