Preparation
- In a medium bowl, beat the softened cream cheese using an electric mixer until it’s smooth and creamy.
- Add the powdered sugar and vanilla extract to the cream cheese, mixing until well-blended.
Assembly
- Lay out the egg roll wrappers on a clean, flat surface.
- Spoon about one tablespoon of cheesecake mixture into the center of each wrapper, followed by a scoop of cherry pie filling.
- Fold the sides of the wrapper in and roll tightly, sealing edges with a little water.
Cooking
- Heat a skillet over medium heat and coat it with cooking spray.
- In batches, fry the assembled rolls for 2-3 minutes on each side until golden brown and crispy.
Serving
- Remove the rolls from the skillet and drain on paper towels.
- Dust with powdered sugar or drizzle with melted chocolate before serving.
Notes
Chill the filling for 15-20 minutes for easier assembly. Try different pie fillings for variety.
