Ingredients
  

Cauliflower Bites
  • 1 large head cauliflower, cut into bite-sized florets
Batter
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1/2 teaspoon salt
  • 1 cup water
Coating
  • 1 cup breadcrumbs (panko preferably) for extra crunch
  • 2 tablespoons olive oil for drizzling
Sauce & Garnish
  • 1 cup buffalo sauce store-bought or homemade
  • fresh parsley for garnish (optional)
  • celery sticks for serving (optional)
  • ranch or blue cheese dressing for dipping (optional)

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C) and prepare a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine flour, garlic powder, onion powder, smoked paprika, cayenne pepper, and salt. Mix thoroughly.
  3. Gradually whisk in the water to the dry mix until you have a smooth, thick batter.
Coating
  1. Dip each cauliflower floret into the batter, letting excess drip off and then roll in breadcrumbs to coat thoroughly.
Baking
  1. Arrange coated cauliflower bites in a single layer on the baking sheet and drizzle with olive oil.
  2. Bake for 20-25 minutes or until golden and crispy, flipping halfway through.
  3. While baking, warm the buffalo sauce in a small saucepan over low heat.
  4. Once baked, toss cauliflower in the warm buffalo sauce in a large mixing bowl.
  5. Return the coated cauliflower to the baking sheet and bake for another 5-10 minutes.
Serving
  1. Garnish with fresh parsley if using and serve immediately with celery sticks and ranch or blue cheese dressing.

Notes

Experiment with spice combinations in the batter and try using an air fryer for an alternative cooking method. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
