Ingredients
  

For the soup base
  • 2 cans canned tomatoes Use fresh tomatoes if preferred.
  • 1 cup vegetable or chicken broth Choose based on preference.
  • 1 medium onion Chopped.
  • 2 cloves garlic Minced.
  • 1 cup heavy cream Can substitute with half & half or oat milk for a lighter version.
  • 4 oz parmesan cheese Use freshly grated for best flavor.
  • 1 tbsp butter Can substitute with olive oil.
For seasoning
  • 1 handful fresh basil Dried basil is also acceptable.
  • to taste salt
  • to taste black pepper

Method
 

Preparation
  1. In a large pot, melt the butter over medium heat and add chopped onion and minced garlic. Sauté until soft.
  2. Add the canned tomatoes (including juice), broth, and basil. Bring to a simmer.
Blending and Finishing
  1. Using a blender, puree the soup until smooth.
  2. Return the blended soup to the pot and stir in the cream and parmesan. Heat gently until the cheese melts.
  3. Taste and adjust seasoning with salt and pepper.

Notes

For a lusher soup, let it simmer longer or add more cream. This recipe is easily customizable; consider adding spinach or chickpeas for extra nutrition.
