Preparation
- In a skillet, heat 2 tablespoons of olive oil over medium heat.
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
- Sear the seasoned chicken breasts in the hot skillet for about 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and sauté until tender, about 3-4 minutes.
- Add the fresh spinach to the skillet and cook until wilted and vibrant, stirring occasionally.
- Reduce heat and stir in cream cheese until melted and combined with the mushrooms and spinach.
- Add the cooked chicken back to the skillet and sprinkle shredded cheese over it, allowing it to melt as everything heats through.
- Serve warm, paired with your favorite sides.
Notes
For extra flavor, marinate the chicken in garlic, lemon juice, and herbs for a couple of hours before cooking. You can also add cooked pasta or rice for a more substantial meal, or experiment with different types of cheese.
