Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the cherry tomatoes thoroughly.
  3. In a mixing bowl, drizzle 1 tablespoon of olive oil and balsamic vinegar over the cherry tomatoes. Add the minced garlic, salt, and black pepper, then toss to coat evenly.
  4. Spread the tomatoes on a baking sheet in a single layer.
Cooking
  1. Roast the tomatoes in the preheated oven for about 15-20 minutes, until they are blistered and slightly caramelized.
  2. While the tomatoes are roasting, prepare the herb-infused oil. In a small bowl, combine the remaining tablespoon of olive oil, chopped basil, parsley, chives, lemon zest, and a pinch of red pepper flakes, if using. Mix well to combine.
  3. Once the roasting is complete, place the burrata balls gently on a serving plate.
  4. Drizzle them generously with the herb-infused oil.
  5. Arrange the blistered tomatoes around the burrata and drizzle any remaining juices from the baking sheet over the dish.
  6. Garnish with fresh basil leaves and additional black pepper if desired.
