Preparation
  1. Preheat the oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas until smooth. Mix in the coconut oil, sour cream, and vanilla extract until well blended.
  3. In a separate bowl, beat the cream cheese until smooth, then gradually mix in the sugar until creamy.
  4. Pour half of the banana batter into the prepared loaf pan. Spread the cream cheese mixture over it, then top with the remaining banana batter.
Baking
  1. Bake for 50-60 minutes, checking for doneness with a toothpick inserted in the center.
  2. Allow cooling in the pan for 10 minutes before transferring to a wire rack to cool completely.

For best results, ensure the cream cheese is at room temperature. Consider adding a pinch of cinnamon or nutmeg to the banana batter for extra flavor. Substitute brown sugar for white sugar for added moisture and flavor depth.
