Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a mixing bowl, beat together the softened butter and 1/2 cup of granulated sugar until creamy, about 2-3 minutes.
- Gradually mix in the flour and salt until a soft dough forms.
- Transfer the dough into the prepared baking dish and press evenly to form a solid crust.
- Bake for about 15 minutes or until the edges are lightly golden.
Filling
- In another bowl, whisk together the eggs, 1 cup of sugar, lemon juice, lemon zest, and baking powder until smooth.
- Gently fold in the chopped cranberries.
- Pour the cranberry filling over the pre-baked crust, spreading evenly.
- Bake for an additional 20-25 minutes, or until the center is set.
- Allow the bars to cool completely in the dish on a wire rack.
- Dust with powdered sugar before serving.
Notes
For added flavor, consider adding a teaspoon of vanilla extract to the filling. You can also swap cranberries for blueberries or raspberries. Ensure to cut the bars into small squares for easier serving.
