Preparation
- Preheat your oven to 350°F (175°C).
- Grease an 8x8 inch baking dish.
- In a mixing bowl, combine the 1 1/2 cups flour, 1/2 cup powdered sugar, and 1/2 teaspoon salt.
- Add the cold, cubed butter, and mix until the mixture resembles coarse crumbs.
- Press it firmly into the bottom of the prepared baking dish.
- Bake the crust for 15-20 minutes until lightly golden.
Making the Filling
- In a separate bowl, whisk together the 3 large eggs and 1 cup granulated sugar until well combined.
- Stir in the 1/4 cup lemon juice, lemon zest, and 1/4 cup flour until smooth.
- Fold in the cranberries and the optional white chocolate chips.
Baking
- Pour the filling over the pre-baked crust and spread it evenly.
- Bake for an additional 25-30 minutes or until the filling is set and lightly golden on top.
Finishing Touches
- Allow the bars to cool completely in the pan.
- Dust generously with powdered sugar and add additional lemon zest if desired.
- Cut into squares, serve, and enjoy!
