For the pastry bites
  • 1 sheet puff pastry, thawed The golden, flaky base.
  • 8 oz creamy brie cheese, cut into small pieces Silky and rich, melts beautifully.
  • 1/2 cup cranberry sauce (homemade or store-bought) Provides tart sweetness.
  • 1 large egg, beaten (for egg wash) Gives a golden, glossy finish.
  • 1 tsp chopped fresh rosemary or thyme (optional) Aromatic notes for enhancement.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the thawed puff pastry and cut it into 3-inch squares.
  3. In the center of each square, place a piece of brie, followed by a spoonful of cranberry sauce.
  4. Fold the corners of the pastry towards the center to seal the filling, pinching the edges securely.
  5. Brush the tops of the bites with the beaten egg.
Baking
  1. Place the bites on a baking sheet and bake for 15-20 minutes, or until puffed up and golden brown.

Notes

For best results, use parchment paper on the baking sheet and allow the bites to cool slightly before serving to avoid burns from hot filling. You can prepare the bites in advance and store in the fridge before baking.
