Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a mini muffin tin to ensure easy release.
  3. Roll out the puff pastry on a floured surface and cut it into 24 squares.
  4. Place each puff pastry square into a mini muffin cup, gently pressing it down.
  5. Add a piece of Brie into each cup.
  6. Top with a small spoonful of cranberry sauce.
  7. Sprinkle with chopped pecans and rosemary, if using.
  8. Bake for 13-15 minutes, or until the pastry is golden and the cheese melted.
  9. Remove from the oven and let cool for 5 minutes before serving.

Notes

Consider adding a drizzle of honey before baking for extra sweetness. Leftover pastry squares can be frozen for future use.
