Method
 

Preparation
  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Line a baking sheet with parchment paper or grease it with cooking spray.
  3. In a medium-sized bowl, mix together the Greek yogurt or mayonnaise with the ranch seasoning mix until smooth.
  4. In another bowl, combine the shredded cheddar cheese, grated Parmesan cheese, crushed Ritz crackers, garlic powder, paprika, and black pepper.
Coating & Baking
  1. Dip each chicken tender into the yogurt mixture, ensuring full coverage.
  2. Press the coated chicken tender into the cheese and cracker mixture to cover.
  3. Arrange the coated chicken tenders on the prepared baking sheet and spray the tops lightly with cooking spray.
  4. Bake in the oven for 25-30 minutes, flipping halfway through, until the internal temperature reaches 165 degrees F (74 degrees C).
  5. Serve hot with your favorite dipping sauce.

Notes

You can prep the chicken tenders in advance and refrigerate them for up to 24 hours before baking. For a spicy kick, add some cayenne pepper to the crumb mixture.
