Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Rub the salmon fillets generously with olive oil and season with salt, pepper, smoked paprika, and Cajun seasoning. Make slits in the thickest part of each fillet.
Mixing Stuffing
- In a medium bowl, combine thawed spinach, Boursin cheese, diced jalapeno, lump crab meat, Parmesan cheese, and minced garlic. Mix until creamy.
Assembly and Baking
- Stuff each salmon fillet with the crab mixture, pressing in snugly. Place a few shrimp on top of each stuffed fillet.
- Drizzle melted butter over the stuffed fillets.
- Bake for 15-17 minutes until salmon flakes easily with a fork and shrimp are tender.
Finishing Touch
- Squeeze fresh lemon juice over the salmon just before serving.
Notes
Tips for success: Ensure uniform thickness of salmon fillets, taste the stuffing for balance, and if possible, let the stuffing sit for 15-30 minutes to meld flavors.
