  • 2 1/4 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
Wet Ingredients
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1/2 cup molasses
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling) For coating the cookies

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, nutmeg, salt, and baking soda.
  3. In a large mixing bowl, beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.
  4. Add the egg, molasses, and vanilla extract to the butter mixture; mix until combined.
  5. Gradually add the dry mix to the wet ingredients, stirring until just combined.
  6. If desired, chill the dough in the fridge for 30 minutes.
Baking
  1. Scoop tablespoon-sized portions of dough, roll them into balls, and coat them in granulated sugar.
  2. Place the sugar-coated balls on the prepared baking sheet, leaving about 2 inches between each.
  3. Bake for 8-10 minutes until the edges are set, and the tops are cracked.
  4. Let cool on the baking sheet for 5 minutes before transferring the cookies to a wire rack.

Notes

For a softer cookie, consider underbaking by a minute or two. Enhance flavors by chilling dough overnight.
