- Cook the orzo according to the package instructions until al dente. After cooking, drain and rinse under cold water to cool down.
- In a jar, combine olive oil, lime juice, honey or maple syrup, chipotle powder, cumin powder, sea salt, and black pepper. Secure the lid and shake until well mixed.
- In a large mixing bowl, combine the cooled orzo, black beans, corn, bell pepper, tomato, red onion, and cilantro.
- Drizzle the dressing over the salad mixture and toss gently to coat all ingredients evenly.
- Enjoy immediately or chill for a few hours to allow flavors to meld before serving.
Notes
For a creamier salad, consider adding Greek yogurt or feta cheese. For additional flavor, diced jalapeños or avocado can be included.
