Dressing

Method
 

Preparation
  1. Cook the orzo according to the package instructions until al dente. After cooking, drain and rinse under cold water to cool down.
  2. In a jar, combine olive oil, lime juice, honey or maple syrup, chipotle powder, cumin powder, sea salt, and black pepper. Secure the lid and shake until well mixed.
  3. In a large mixing bowl, combine the cooled orzo, black beans, corn, bell pepper, tomato, red onion, and cilantro.
  4. Drizzle the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  5. Enjoy immediately or chill for a few hours to allow flavors to meld before serving.

Notes

For a creamier salad, consider adding Greek yogurt or feta cheese. For additional flavor, diced jalapeños or avocado can be included.
