  • 1 box white cake mix (gluten-free if needed)
  • 1 cup milk (whole or 2 percent)
  • 1/3 cup vegetable oil (or melted butter)
  • 4 large egg whites
  • 2 teaspoons cotton candy extract (or a mix of vanilla + almond)
  • 1 teaspoon clear vanilla extract
  • 1 bottle gel food coloring (pink and blue)
Frosting ingredients
  • 1 cup unsalted butter (room temperature)
  • 4 cups powdered sugar (sifted)
  • 2-4 tablespoons heavy cream
  • 1 teaspoon cotton candy extract
  • 1 teaspoon vanilla extract (optional)
  • 1 bottle gel food coloring (optional white)
Decorative toppings
  • 1 cup cotton candy (add just before serving)
  • to taste sprinkles (any color/theme)
  • to taste edible glitter (optional)
  • to taste sugar pearls (pink and blue)
  • to taste white chocolate (for optional drip effect)

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Prepare two 8-inch cake pans by lining them with parchment paper and greasing the sides.
  2. In a large mixing bowl, combine the white cake mix, milk, vegetable oil, egg whites, and both extracts. Mix until just combined.
  3. Divide the batter into two separate bowls and use gel food coloring to tint one bowl pink and the other blue.
  4. Spoon alternating dollops of each color into the prepared pans to create a marbled effect and swirl gently with a knife.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes.
  2. Transfer them to a wire rack to cool completely.
Frosting and Assembly
  1. For the frosting, beat the room temperature butter until fluffy. Gradually add the sifted powdered sugar, along with the cotton candy extract, vanilla extract, and heavy cream.
  2. Level the cooled cake layers if necessary. Stack the layers with frosting in between and apply a thin crumb coat.
  3. Chill the cake for 30 minutes to help the frosting set, then apply the final frosting layer.
  4. Decorate with sprinkles, sugar pearls, and cotton candy just before serving.

Notes

Ensure all ingredients are at room temperature for smoother frosting. Consider adding edible glitter or white chocolate for a touch of elegance. Using a serrated knife helps level cakes neatly.
