  • Wax paper or plastic wrap For wrapping sandwiches.
  • A sprinkle of patience You'll need this for the freezing step.

Method
 

Assembly
  1. Lay half of the cookies face down on a clean surface.
  2. Let the ice cream soften slightly until scoopable.
  3. Dollop a generous scoop of cookies and cream ice cream on each cookie.
  4. Top with another cookie and gently squeeze to create a sandwich.
  5. Optionally, roll the edges in mini chocolate chips for added decoration.
  6. Wrap each sandwich in wax paper or plastic wrap.
  7. Place the wrapped sandwiches in the freezer for about 10 minutes to firm up.
