Preparation
- Preheat the Oven: Set your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Mix Dry Ingredients: In a bowl, combine flour, cocoa powder, baking soda, baking powder, and salt. Whisk until blended.
- Combine Wet Ingredients: In another bowl, whisk buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
- Combine Mixtures: Gradually mix the wet ingredients into the dry ingredients until just combined.
- Fold in Cookies: Gently fold in the crushed chocolate cookies.
- Divide Batter: Pour the batter evenly into the prepared cake pans.
Baking
- Bake: Place pans in the oven and bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool the Cakes: Let the cakes cool in the pans for about 15 minutes, then transfer to wire racks to cool completely.
Frosting and Assembly
- Prepare the Frosting: Beat softened cream cheese until smooth, then add powdered sugar until well incorporated.
- Whip Cream: In another bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
- Assemble the Cake: Place one cake layer on a serving platter, frost the top, add the second layer, and frost the top and sides.
- Garnish: Sprinkle the extra crushed cookies on top for garnish.
Notes
For even baking, avoid opening the oven door during the process. Use room temperature ingredients for a smoother batter.
