Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1 cup buttermilk
  • 0.5 cups vegetable oil
  • 3 large eggs
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1.5 cups crushed chocolate sandwich cookies (like Oreos)
For the Frosting
  • 1 cup heavy whipping cream
  • 8 oz cream cheese, softened
  • 1.5 cups powdered sugar
  • Extra crushed cookies for garnish (optional)

Method
 

Preparation
  1. Preheat the Oven: Set your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a bowl, combine flour, cocoa powder, baking soda, baking powder, and salt. Whisk until blended.
  3. Combine Wet Ingredients: In another bowl, whisk buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Combine Mixtures: Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in Cookies: Gently fold in the crushed chocolate cookies.
  6. Divide Batter: Pour the batter evenly into the prepared cake pans.
Baking
  1. Bake: Place pans in the oven and bake for 25-30 minutes, or until a toothpick comes out clean.
  2. Cool the Cakes: Let the cakes cool in the pans for about 15 minutes, then transfer to wire racks to cool completely.
Frosting and Assembly
  1. Prepare the Frosting: Beat softened cream cheese until smooth, then add powdered sugar until well incorporated.
  2. Whip Cream: In another bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  3. Assemble the Cake: Place one cake layer on a serving platter, frost the top, add the second layer, and frost the top and sides.
  4. Garnish: Sprinkle the extra crushed cookies on top for garnish.

Notes

For even baking, avoid opening the oven door during the process. Use room temperature ingredients for a smoother batter.
