Ingredients
  

For the Brownie Layers
  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 tsp salt
For the Cookie Dough Filling
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1 cup mini chocolate chips
For the Ganache
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Method
 

Preparation of Brownie Layers
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line them with parchment paper for easy cleanup.
  2. In a large bowl, melt the butter and stir in the granulated sugar until well combined.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. Stir in the vanilla extract, then add flour, cocoa powder, and salt, mixing until just combined.
  5. Divide the brownie batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out with a few moist crumbs.
  6. Let the brownie layers cool completely in the pans before removing.
Preparation of Cookie Dough Filling
  1. Cream together softened butter, brown sugar, and granulated sugar until fluffy.
  2. Add milk and vanilla extract, mixing well.
  3. Blend in flour and salt until just combined, and gently fold in the mini chocolate chips.
Assembling the Cake
  1. Place one brownie layer on a serving plate.
  2. Spread a layer of cookie dough over the brownie, then place the second brownie layer on top, pressing down gently.
Preparation of Ganache
  1. Heat heavy cream in a saucepan until simmering, then remove from heat.
  2. Stir in the semi-sweet chocolate chips until smooth.
  3. Pour ganache over the top of the assembled cake.
  4. Let the ganache set for about 10 minutes before slicing and serving.

Notes

To elevate your cake, consider adding a dash of sea salt on top of the ganache once it sets. Swap the mini chocolate chips for your favorite candies for a fun twist. You can also try different nuts for added texture and flavor.
