Preparation
  1. In a large pot, melt the unsalted butter over medium heat.
  2. Add the diced onion, sliced carrots, and sliced celery. Sauté them for 5-7 minutes until they are softened and fragrant.
  3. Stir in the minced garlic and cook for about 1 minute, just until fragrant.
  4. Pour in the chicken broth and add the shredded chicken, thyme, parsley, black pepper, and salt. Allow the mixture to simmer for 10 minutes.
Dumpling Preparation
  1. While the soup simmers, combine the flour, baking powder, salt, and dried parsley in a mixing bowl.
  2. Stir in the milk and melted butter until a sticky dough forms.
Cooking
  1. Using a spoon, drop spoonfuls of the dumpling dough into the simmering soup.
  2. Cover the pot and cook for 15 minutes.
