Method
 

Preparation
  1. Begin by cutting the chicken breasts into bite-sized pieces.
  2. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
Marinade Creation
  1. In a bowl, combine coconut milk, minced lemongrass, ginger, garlic, soy sauce, brown sugar, cumin, coriander, and turmeric.
  2. Whisk until fully blended.
Marinate the Chicken
  1. Place chicken pieces in the marinade, ensuring each piece is well-coated.
  2. Cover the bowl and refrigerate for at least one hour.
Grill Preparation
  1. Preheat the grill to medium-high heat.
Skewering the Chicken
  1. Thread the marinated chicken onto the skewers with space in between each piece.
Grilling
  1. Grill skewers for 10-12 minutes, turning occasionally.
  2. Look for fully cooked chicken and a slight char.
Serving
  1. Remove skewers from the grill and serve hot with lime wedges and sweet chili sauce.

Notes
