Ingredients
  

Fritter Batter
  • 180 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 60 grams unsalted butter, melted
  • 50 grams granulated sugar
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 120 millilitres unsweetened applesauce
  • 1.5 cups finely diced Honeycrisp or Gala apples (approximately 2 medium apples)
Glaze
  • 240 grams powdered sugar
  • 100 millilitres apple cider or apple juice
For greasing
  • Nonstick cooking spray for greasing mini muffin tin

Method
 

Preparation
  1. Preheat your oven to 175°C (350°F) and lightly coat a mini muffin tin with nonstick cooking spray.
  2. In a medium mixing bowl, combine the flour, baking powder, kosher salt, and ground cinnamon.
  3. In a separate bowl, whisk together the melted unsalted butter and granulated sugar until smooth.
  4. Incorporate the egg, vanilla extract, and applesauce, mixing until the batter is creamy.
  5. Gradually add the dry ingredients to the wet mixture and fold in the diced apples.
  6. Spoon the batter into the prepared muffin cups, filling each about three-quarters full.
Baking
  1. Bake for 12 to 15 minutes, or until a toothpick inserted in the center comes out clean.
Glazing
  1. While the fritters cool slightly, whisk together powdered sugar and apple cider in a bowl until smooth.
  2. Submerge each warm apple fritter into the glaze, allowing the excess to drip off.
  3. Place the glazed fritters on a wire rack to set.

Notes

For healthier alternatives, substitute granulated sugar with sweetener, use coconut oil in place of butter, and try whole wheat flour for extra fiber. Best served warm with a scoop of vanilla ice cream.
