Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
Wet Ingredients
  • 2 tablespoons instant coffee granules Can experiment with different flavors.
  • 1 teaspoon vanilla extract
  • 0.5 cups unsalted butter, melted
  • 0.75 cups brown sugar
  • 1 large egg
Sugars for Rolling
  • 0.25 cups granulated sugar For rolling the dough.
  • 0.25 cups powdered sugar For rolling the dough.

Method
 

Preparation
  1. In a medium bowl, whisk together the flour, cinnamon, baking powder, and salt. Set aside.
  2. In a small bowl, mix the coffee granules with vanilla extract until dissolved.
  3. In a large bowl, beat the melted butter and brown sugar until smooth.
  4. Mix in the egg and the coffee mixture until fully combined.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Cover the dough and refrigerate for 30 minutes.
Baking
  1. Scoop the dough into small balls and roll in granulated sugar, then in powdered sugar.
  2. Place on a parchment-lined baking sheet and bake at 350°F (175°C) for 10 to 12 minutes.
  3. Let cool before transferring to a wire rack.

Notes

Cookies can be frozen. For a unique twist, try adding chocolate chips or nuts.
