Preparation
- In a medium bowl, whisk together the flour, cinnamon, baking powder, and salt. Set aside.
- In a small bowl, mix the coffee granules with vanilla extract until dissolved.
- In a large bowl, beat the melted butter and brown sugar until smooth.
- Mix in the egg and the coffee mixture until fully combined.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Cover the dough and refrigerate for 30 minutes.
Baking
- Scoop the dough into small balls and roll in granulated sugar, then in powdered sugar.
- Place on a parchment-lined baking sheet and bake at 350°F (175°C) for 10 to 12 minutes.
- Let cool before transferring to a wire rack.
Notes
Cookies can be frozen. For a unique twist, try adding chocolate chips or nuts.
