Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each, and stir in the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, salt, and ground cinnamon. Gradually mix this into the wet ingredients until just combined.
  5. In a separate bowl, beat the cream cheese until smooth, then mix in the powdered sugar and vanilla extract.
Assembly
  1. Scoop tablespoon-sized amounts of cookie dough, flattening them in hand, place a spoonful of cheesecake filling in the center, and cover with another flattened tablespoon of cookie dough.
  2. Roll the assembled cookies between palms to smooth them out and place on baking sheets.
  3. Mix granulated sugar and ground cinnamon in a small bowl, rolling each dough ball in this mixture.
Baking
  1. Bake cookies in the preheated oven for 10-12 minutes until edges are golden brown; they should remain soft in the center.
  2. Cool cookies on the baking sheet for a few minutes before transferring to a wire rack.
