Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each, and stir in the vanilla extract.
- In another bowl, whisk together flour, baking soda, salt, and ground cinnamon. Gradually mix this into the wet ingredients until just combined.
- In a separate bowl, beat the cream cheese until smooth, then mix in the powdered sugar and vanilla extract.
Assembly
- Scoop tablespoon-sized amounts of cookie dough, flattening them in hand, place a spoonful of cheesecake filling in the center, and cover with another flattened tablespoon of cookie dough.
- Roll the assembled cookies between palms to smooth them out and place on baking sheets.
- Mix granulated sugar and ground cinnamon in a small bowl, rolling each dough ball in this mixture.
Baking
- Bake cookies in the preheated oven for 10-12 minutes until edges are golden brown; they should remain soft in the center.
- Cool cookies on the baking sheet for a few minutes before transferring to a wire rack.
Notes
