Cake Base
  • 2 cups all-purpose flour for a light, fluffy texture
  • 2 tsp baking powder ensuring the cake rises beautifully
  • 1/2 tsp salt balancing the sweetness
  • 1/2 cup unsalted butter, softened bringing richness and moisture
  • 1 cup granulated sugar for a sweet base
  • 3 large eggs adding structure and richness
  • 1 tsp vanilla extract infusing warmth and flavor
  • 3/4 cup whole milk for a moist cake
Whipped Cream Topping
  • 1 cup heavy cream creating a luscious topping
  • 2 tbsp powdered sugar sweetening the whipped cream
Decorations
  • 1/2 cup assorted berries (cranberries, blackberries, red currants) for a festive and colorful décor
  • Fresh mint leaves adding a refreshing touch
  • Edible glitter or sanding sugar for a magical finish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your wreath-shaped cake pan.
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  3. In a separate bowl, use an electric mixer to cream the softened butter and granulated sugar together until fluffy (about 3-4 minutes).
  4. Add the eggs one at a time, incorporating each fully before adding the next, then stir in the vanilla extract.
  5. Alternate adding the flour mixture and the milk to the wet ingredients, beginning and ending with the flour mixture.
Baking and Cooling
  1. Pour the batter into the prepared pan and bake for 35-40 minutes, until a toothpick comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Topping and Decoration
  1. In a bowl, whip the heavy cream with powdered sugar until stiff peaks form.
  2. Once cooled, pipe the whipped cream on top of the cake, then arrange the assorted berries, fresh mint leaves, and sprinkle with edible glitter.

Notes

For additional flavor, you can add a teaspoon of almond extract with the vanilla. Ensure your butter is at room temperature for optimal creaming.
